but if your system has significant differences at different values, then the color coding is necessary. If there's not, then you might as well go with grayscale. The most important factor is whether there are qualitative changes in your system or not. If you can bin your results into appropriate colors (using caxis), then the color divisions are actually quite meaningful and information is lost in the greyscale.
